What a wonderful time summer is with all the fresh vegetables available!!!! Nothing makes me happier than a homegrown tomato. Even if you do not grown markets all around there are farmers markets all around. Some of you may even belong to a CSA (Community Supported Agriculture). Summer is a food lover’s haven.
As athletes, I know most of you think about food and what you eat often. Maybe the increase training causes hunger and you have to consume more. Maybe you care about your overall health. Anyway it goes food is an issue. I love good food. I love the fact that food fuels my body and good food gives me what I need to train at my best. I find often while running the conversation turns to food. Many of my friends have children they cook for daily. And they are concerned about good nutrition. My sister, Liesl, and I love to try new recipes using vegetables from the local farmers market. Lately I have been craving vegetables. This season is considered mid- season, early August to early September. The vegetables now available are: Carrots Celery Eggplant Garlic Green beans Fennel Leeks Melons Peppers Sweet corn Tomatoes (there are more I am sure!!!) Each of these is tasty and good for you so I thought I would share with you one of my favorite. I love carrots!!!!! "They are considered the most truly root of all vegetables. They contain many salts. Root substances rich in salts strengthen man through the head. The carrot is almost all root. If you have a sort of empty feeling in the head and cannot think well, it would be good to add carrots to your diet for a time." Lecture by Rudolf Steiner Eat carrots and be happy!!!! Moroccan Carrot Salad 1 pound carrots cut into matchsticks ½ cup olive oil 3 tablespoons lemon juice 2 garlic cloves 1-teaspoon cumin ¼ teaspoon cayenne pepper salt and pepper to taste ¼ cup chopped cilantro cook carrots in gentle boiling water 3-5 minute until tender but not soft combine the rest of ingredients, whisk together, add carrots, toss in cilantro, chill. |
